Today my little puppy girl made her 30 for 30 debut! She’s not possessed, I promise. Her name is Lola and she’s the best cuddle bug in the world. This morning she snuggled under the covers with me while hubby was in the shower and I slept for an extra half hour. It’s part of our morning routine almost daily.
A little sidenote about today’s outfit – the cami doesn’t count as one of my 30 for 30 items since I’m wearing it more as an undergarmet. Trust me. I read the rules. Again, I was going for comfort with this outfit. And warmth. Because we got a nice dumping of snow today. Ick. I’m so over winter!
It’s a Friday night and I’m feeling pretty miserable. I wasted 3 hours of my night trying to turn this cookie recipe into a success story. I wish I had looked it up online (I had it bookmarked in a recent copy of ‘All You’ magazine) before going to work in the kitchen. As a few other reviewers commented, there must be some missing ingredients because my dough was a crumbly mess, the filling was a disaster, and I couldn’t get the dang nonpereils to stick. (Yes, I am the a-hole that gave this a 1 star rating. Created an account just so I could post my review.) I finally just gave up and let hubby try to salvage something from the mess. Turns out he’s got the magic in him because he was able to fix enough cookies to almost fill a ziplock sandwich bag. Not worth having to toss the rest of the mix but I have to admit the cookies tasted pretty good once assembled. Still, I will not be attempting this recipe again.
I prefer to do most of my cooking and baking on the weekends when I’m not feeling rushed but after working until 7pm for the first few days of the week, all I wanted to do when I left work at my normal time today was cook a meal for hubby and I. After bookmarking this recipe last week, I decided that tonight was the perfect night to give it a try. It has been incredibly cold out lately and we’ve both been so busy this week. Sometimes comfort food can make all the difference.
As usual, I pretty much followed the recipe exactly with just a couple of minor tweaks. I used 1/2 cup of panko breadcrumbs, a mix of mild and extra-sharp cheddar, and accidentally put in double the pepper but it tasted just fine! This is a pretty heavy mac and cheese and although the recipe states that it serves 4, I used four 7 oz ramekins as well as one 16 oz ramekin for the remaining mixture so in my opinion it’s more like 6 servings. After eating one of the small ramekins, a small slice of Pepperidge Farm garlic bread, and enjoying a cold beer (Long Trail Ale – based in VT) alongside my meal I was absolutely stuffed. It was delicious!

Today’s outfit wasn’t one of my favorites. I didn’t love the headband look, I probably could have left the belt behind, and I should have worn my gray suede wedges instead. Although it’s rare, some days I just don’t feel like wearing heels and today was one of them. I was going for comfort but I think it ended up looking a little sloppy.
It’s going to be a quiet evening in the apartment. Hubby is already asleep in the recliner and I’ll probably start getting ready for bed soon (it’s not even 8pm yet). Clearly, my body is telling me that I need to get some sleep but I feel like I’m not supposed to go to bed this early. I almost feel like it’s unreasonable for a young person to want to be in bed before 9 or 10pm. I’m 27, not 70..I should still have all sorts of energy at the end of the day! It’s times like this when I truly realize that I’m getting older. Not just getting older, that’s a given, but feeling older. Can anyone else relate?

I bought this black ruffle dress on sale last September when I was out of town for business travel and today was the first time I’ve actually worn it. I’ve tried it on several times between then and now but for some reason I always ended up choosing a different outfit. Today, I was pretty pleased with how this outfit came together.
Although it’s only Wednesday, I am already beyond exhausted from my work load for this week. Have you ever had one of those weeks when you feel like you never stop working but somehow your to-do list just keeps getting longer? That’s how I’m feeling this week. However, I’ve got some travel opportunities coming up in the next month which will give me a nice break from the office. (If anyone lives in the Tampa, FL area and has suggestions for restaurants and shopping, please let me know!)

As promised, I have not forgotten about the 30 for 30 challenge in my blog absence and continued to take daily photos. I’m not posting the info for each individual piece in all of these photos but you can refer to my full list of 30 for 30 items here.
I took a day off on Sunday and lounged around in my favorite fleece pants and hoodie all day so I’m a day behind in the challenge. Admittedly, I’m starting to really struggle with putting together an outfit every morning. I’m starting to miss some of my other clothes that haven’t gotten any attention in the last 21 days! So far in the challenge, I’ve put together a few new outfits that I really love and can’t wait to wear again.
So, fellow remixers..how are the rest of you feeling at this point in the challenge? This is my 1st challenge so I think it’s pretty normal that I’m starting to feel drained of creativity but I’m wondering if those of you who have participated before still feel the same. Any tips for getting through the final stretch?? Please comment below and share any advice you have to help get me through the last 9 days!
You may have noticed that it’s been nearly a week since my last blog post. I’m so sorry! I didn’t mean to drop off the face of the earth for the last 6 days but sometimes life gets in the way. Work has been a wee bit insane lately and I opted for a spontaneous weekend getaway with some of my best girls to let loose and have a little fun. We enjoyed some great (and not so healthy, eek!) food, wonderful conversation, and a few too many adult beverages. It was exactly what I needed! I haven’t forgotten about the 30 for 30 challenge so I’ll be back tomorrow to play catch up with a giant outfit post. : )
